The purpose of this document is to describe a routine method for industrial use for determining the fat content of creams, the reference method remaining the gravimetric method (by ammoniacal ether extraction) described in the standard NF ISO 2450. This method is applicable to creams having a fat content between 20 % and 50 % inclusive: - intended for manufacturing butter - sweet, unmatured and non-inoculated; - raw or having undergone a heat treatment; - non homogenised; - with or without preservatives (2-bromo-2-nitropropane, 1,3 diol or bronopol). These creams shall not present any physical anomalies at the time of analysis.
