This standard covers smoke houses for commercial use and accessories. In this standard is specified, which hazards are covered. For other hazards, which are not covered by this standard, smoke houses shall, as applicable, be according to EN ISO 12100-1:2003. This European Standard specifies requirements for design and manufacture of smoke houses. The machines covered by this standard are used for smoking of meat, fish and similar products as well as the connected heating- and cold processes. This standard deals with all significant hazards, hazardous situations and events and hygiene requirements relevant to smoke houses, appliances and machinery, when they are used as intended and under the conditions foreseen by the manufacturer (see Clause 4). This standard deals with the hazards which can arise during commissioning, operation, maintenance and decommissioning of the machine. This document is not applicable to smoke houses which are manufactured before the date of publication of this document by CEN.
